Truly the best cheese cake. Makes enough for a large round springform pan or two 9" pie plates. My cousin uses a 9x13 foil pan.

Prep time: 30 min 
Bake/Cook Time: 30-40 min 
Total time: 1 hour

 Preheat to: 350 F 

Ingredients:

Amount Ingredient
CRUST:
20-25 graham crackers, crushed
1 tbsp sugar (for crust)
3 tbsp melted butter
FILLING:
3 egg yolks
3/4 cup + 1 tbsp sugar (for filling)
pinch salt
1 tsp vanilla
1 tsp almond extract
2 cups sour cream
1 lb cream cheese

Instructions:

  • CRUST: combine crushed graham crackers with 3 tbsp melted butter and 1 tbsp sugar
  • press into pan
  • bake crust 10 minutes
  • FILLING: beat 4 whites, fold into the rest
  • pour on top of crust
  • bake at 350 F for 30-40 minutes
  • cool in oven with door open

Serving instructions and additional notes:

top with blueberry pie filling
