Passover Sponge Cake

A bit tricky to make, but this is our Passover sponge cake. Delicious if it works out right!

Bake/Cook Time: 40-50 minutes 

 Preheat to: 325-350 F 

Ingredients:

Amount Ingredient
8 eggs, separated
1 Β½ cups sugar
1 cup sifted cake meal
Β½ or 1 lemon (grated rind and juice)
1 orange (grated rind and juice)
pinch salt

Instructions:

  • Separate eggs
  • In large bowl, beat yolks till light. Gradually add sugar
  • Add pinch of salt, lemon and orange and cake meal
  • Beat again
  • In separate, very clean, large enough bowl, beat whites till stiff, not dry
  • Fold whites into yolk mixture
  • Put carefully in ungreased sponge cake pan (if bottom separates, be careful it's properly assembled)
  • Bake at 325-350 F for 45-50 minutes
  • Touch with finger to test, BUT don't open the oven too early or the thing will fall in and be ruined!

Serving instructions and additional notes:

It can be a little tricky, but it's quite easy once you get the hang of it.
My mother often adds cinnamon and wine to the yolks instead of the lemon for a different sort of flavour. It also works with cocoa, or leftover charoset!
